Conducting biochemical research in the body of animals on which the toxic effect of a food additive was studied, expands data on its action. Therefore, the task of research was to study some indicators of protein metabolism in the blood and liver of white mice, which high doses of modified gelatin were administered intragastrically. IN the activity of aminotransferases, the content of total protein and urea and the content of protein and uric acid in the liver. It was established that as a result of oral administration of laboratory animals modified gelatin in the amount of 1000 mg / kg of body weight the content of urea in the blood and uric acid in the liver was, respectively, at levels of 3.3 mmol / l and 1.32 μmol / g. Administration from 2000 to 5000 mg of modified gelatin per kilogram of animal body weight did not cause a probable increase or decrease in the content of urea in the blood and of uric acid in the liver of mice. It has been proven that at the end of the experiment the protein content in the blood and liver and the activity of aminotransferases in the liver of mice fed from 1000 to They did not have 5000 mg of modified gelatin per kilogram of body weight probable difference between themselves.
